Indian Style Zucchini Fritters
Feel free to play around with this recipe. Make it Mexican with jalapenos, and sour cream. Make it Italian with a dash of Oregano and
a sundried tomato aioli. If you don't know what an aioli is, google it, and how long have you been under a rock?
What you need:
1 tbsp grainy mustard.
1 cup of japanese panko crumbs
1/2 tsp of cumin
pinch of cinnamon and clove.
salt and pepper-to taste.
2-4 tbsp of oil.
1/2 cup sour cream- spiced with a good pinch of Garam Masala. This stays cool, scoop onto your hot fritters, as a garnish.
(You can also use plain yogurt)
What you do:
Mix all this stuff in a bowl, if it is too loose (like your mother) then add a little flour.
We don't want this to be too 'battery' - it is not a Metallica song, it is a fritter.
Add about 2 tbsp of oil (I like grapeseed, but you probably have canola, that will do)
When the oil is hot, drop a good tbsp of the mixture to the pan. (over med/high) heat.
Don't crowd your pan, flip once, when golden brown- place on paper towel to drain-
Serve with a dollop of masala sour cream.
If you want to get fancy, you could place a little Morrocan Spiced Chicken or Lamb on top.
